如何能去除猴头菇的苦味儿呢?
长白山猴头菇煲汤前泡发的具体步骤:
猴头菇泡发是整个菜谱的关键,泡发不好就是暴殄天物。
1、温水浸泡猴头菇(30°-40°的温水最好,淘米水更佳),直到猴头菇变软。我通常放在电饭锅里,让电饭锅处于保温状态 。记住千万不能用沸水。
2、泡软的猴头菇减去根蒂(别不舍得剪,这部分是苦的),撕开并清水清洗,捏干,反复数次,最好是水已清澈(可以用手指蘸一点猴菇表面的水放到舌尖,感觉不出苦涩为好)。
3、处理完毕,与其他食材煲汤,炖煮至少一小时以上,直到软烂为止。
